Xavier’s cheese boutique cellars

In the basement of our boutique, Place Victor Hugo, Toulouse, there are three refining cellars - home to our cheeses- placed under the watchful eye of our cellarman. And each cheese family has its own cellar ! Every one of them diffuses temperature, humidity and ventilation conditions adapted to the specificities of the cheese type, the better to respond to the daily development needs of the cheeses.

They are in fact refined there, to the point of their optimal maturity, a preparation with a view to the most tasty of samplings.
