What you need to know...

Three diffrent species of cows are associated to the creation of Abondance: Montbéliardes, Tarines and Abondance. It has a strong scent and it taste is complexe: with a milky and flowers touch, a combination of sweet and a little touch of sour. It has a lightly sour taste, a desired touch, which allows it to gain texture and freshness. Its comsumption must be done most of all when it is young, 6 to 8 months before it has been refinined.
