What you need to know...

Which animal could produce a better, a richer kind of milk than a goat that comes from the region with common extreme temperatures: located in the Espinouse Mountains? None other, for sure. Those goats can produce a milk so rich, with a strong countryside scent. Processed by a passionate manufacturer, into little "rigotte" for our grate pleasure. That rigotte(a little cylinder wrap that is about 3 cm tall) can be consumed in every single stage: fresh, it will give a fresh sour taste; well « covered ». It has a greasy paste that will be melted and perfumed ; with a stronger refining process, that will give a more pronunced caprins flavor, with a touch of berrys that come from the “garrigue”, where it gather with the thyme, caused by a closed paste that is lightly buttered at the point.
