What you need to know...
Issuing from the shy goats of the Ardéche region, this little farm cheese is a variant of Picodon, its model. Its natural rind, made ash-like in the manufacturing process, covers a cheese which has undergone considerable change: when young it is tender and fresh, but hardens with refining. In the Xavier Cheese Boutique we love it mid-dry to dry emitting a remarkable fragrance of goats' milk, slightly acid. Sampled with a dry white wine the flavours of Ardechois embalms one's taste buds!
