This Basque farm-made cheese comes from the milk of traditionally fed ewes. Its texture ranges from firm to dry, depending on the length of refinement.

Its exotic name comes from its native land: the Basque Country (“ardi” means ewe and “gasna” means cheese), which has also passed on to the cheese its character and elegance.
