Tomme of Aydius, which is a village in the Aspe Valley, has been considerably successful. The flocks graze in the mountain in total freedom as soon as the snows begin to melt. With its pressed non-cooked interior, it has a pronounced goats’ milk cheese taste, backed up by a very generously wrapped texture. This cheese has a great propensity to be refined for long periods.
