This has a typical goats’ milk taste, artfully mingled with subtle Provence scents …What is special about Banon is that it’s dressed in chestnut leaves which are themselves brandy-soaked, then raffia- bound ‘skin-to-skin’ to the cheese. The end-product is a personality-laden cheese, which when young radiates rather milky aromas, in turn to become more and more woody with the refining process.
