What you need to know...

 

As a traditional Pyrenean cheese, Baretous is a tomme as we love them.  Its tender and firm dark brown rind covers an interior which can accord with the season and the refining, but is always melty on the palate.  It is similar to Iraty, with slightly less power and its aromas are all finesse and subtility.
