Barousse is a typical cheese from the Pyrenees Mountains, one of the rare ones which still benefits from its ancestral know-how: that is to say, hand-made and containing all the aromas of the high mountains. In its soft melty texture and hay-like flavour, it is similar to Bethmale and its taste milder and more reassuring, so as to make a more rustic cheese.
