What you need to know...
Coming as it does from the big veined-cheese family, Bleu de Gex is one of the mildest of its kind. The cheese beneath its powdery white rind contains the richest of milks with their source in the pastures of the mountainside. Penicillium glaucum is then introduced, the cheese syringe-perforated, and refined for at least a month in cave conditions. Traditionally it is enjoyed hot and spread on potatoes.
