What you need to know...

If you’re fond of Roquefort, you will adore this ewe-milk based farm product which allies strength with creaminess.  Presented in the form of a small blue-veined softish-rind cheese, it reminds us of what Roquefort should be, before it resorted to a certain standardisation.  It is manufactured between December and June and its taste develops the whole year long.  Think about tasting and re-tasting it.
