What you need to know...

Here is a cheese that people wait for all year long… Produced only during winter for over two centuries, it can only be found from fall until the beginning of spring. Authentically farm-produced, this very creamy, almost runny cheese, is contained in a round box made from spruce wood, which imparts pleasant hints of wood to the cheese. Always rubbed with white wine (Côtes du Jura) during aging, this concave cheese has character. It can be eaten straight from the box with a small spoon or is also delicious if melted over a bed of potatoes after being quickly heated in the oven.
