What you need to know...
This is a goats’ milk cheese from the Deux Sèvres region in the shape of a biggish plug of some 5 cm in diametre with a slightly ashen rind, covered in blue, green and whitish veins. The cheese is firmly milky and has a tight, well-linked texture. Its taste expresses its goats’ milk character which intensifies with the refining process. It has finesse which melts in the mouth giving off a flavour of hazel-nuts and mature hay. A dry, slightly sparkling white wine goes well with it, especially if served chilled and not iced!
