At first glance a fresh goats’ milk cheese comes to mind. Yet once in the mouth, its mildness is characteristic of an ewes’ milk cheese. It has low acidity with a grainy sensation on the tongue. This cheese can be eaten alone, without bread while appreciating its milky and white fruit aromas to the maximum.
