Its paste is pale, its crust works perfectly letting the people notice the refined job done for more than 6 months: It is common that the period where it evolves goes from 8 to 14 months. The Viril taste show us the truth place of terroir, rich in typees flavours, commonly amendées by a touch from noisettes.
