Cashel Blue is a well-balanced Irish cheese with a veined texture.  On being cut one expects a creamy, rich, melting cheese.  Once in the mouth, it has a quick well structured attack, leaving ample room for the definition of the refining process, which as it happens will be a character-ful one.  Even though its taste is highly defined, it is nonetheless balanced, bringing to the fore a milky expression and revealing its organic character.
