What you need to know...
Chabis is a high member of the famous Loire goats’ milk cheeses, and is a skilful mixture of slightly sweet flavours with a dash of salt, delicately acid in an aroma of milk. Xavier prefers it at the mid-dry to dry phase, with its interior fine and smooth under a firm ashen rind. It has been manufactured in Poitou for centuries, and is an excellent traditional cheese!
