This little farm cheese is a jewel of its type! Even though not too widely known, this goats’ milk cheese is the subject of great praise. The way it is manufactured preserves its authenticity and originality which are peculiar to its soil. Under a very fine crust the cheese is of a creamy meltiness according to its phase of maturity. The taste which emerges contains the gentle accents of goats’ milk judiciously blending together slightly acidy and savoury flavours. It’s just waiting to be discovered!
