What you need to know...
This heart-shaped cheese is closely related to the Neufchâtel family, with its own slightly pronounced salting characteristics. Its exterior with its veined rind will be worked by the refiners in such a way, and with time, as to produce brownish tones , which will quickly reinforce its power, its melting properties and rich aroma. We always prefer it slightly grey-brownish white, its outside covering not particularly beautiful, but with a consistent interior and a pronounced and fatty sub-rind.
