Anyone who says Xavier says Comté!

Brought up in the cheesemaking ambience of this jewel of the Franche Comté, he devotes all his energy in the quest for the best.

Our choice fell on a pronounced straw-yellow interior, which develops a shortbread-like texture when chewed, amid hazelnut and free flower flavours. Caution: our millstones are unique and tasting what they produce is worth doing so for their own sake. A little tasting tip:

after having lightly chewed the cheese, let it simply melt in your mouth.

This selection is exclusively marketed at Christmas time, because of very limited quantities; so don’t be surprised if we are obliged to ration you!
