It is younger than our Comté de Réserve. Its inside will gain in smoothness and its taste in freshness as time goes by. Our house’s policy is to offer raw-milk farm cheeses so as to enhance the work of our cheesemaking artisans, and to respect their region of production. The organic label contributes to a respect for the environment, which itself forms a part of our our everyday commitments.
