The Crayeux de Roncq is an amazing cheese with a cleaned crust, developed in the north of France. Of a slightly lower texture than Maroilles, its’ elder brother, it introduces under the crust well moist, a very delicate paste: its feel of lightly crumbled – starchy aspect, surprises in its surface consistency. Its grains taste is intimately linked and mellow in the palate. A slightly sweetened flavor can be sensed from it, which is going to intensify in a milky sense and land feeling. Manufactured in a farm with raw milk, it becomes tame very quickly it can not just be well complemented with white beer but also with full-bodied red wine.
