What you need to know...

Crottin de Chavignol is one of the most well known and appreciated goats’ milk cheeses.  It develops significantly in the refining process;  when young it is fresh, white and consistent.  But reaches its peak when it starts to be enrobed by a small white flower and turns blue.  It is then full of lactic aromas, balanced between mildness and acidity.  Its taste is strong with a firm texture.
