What you need to know...
Curvallon is at the very least an atypical farm cheese. It could be thought of as being creamy and smooth, while in fact it is runny and typical. With its slightly veined rind, containing an inside which is similar to that of a Camembert its taste will instantly remind you of a goats’ milk cheese. As for its lingering-in-the-mouth quality, that is near to a Epoisses. Our farmer of course respects the seasons with its periods of natural lactation: his cheese is therefore only available between March and November
