What you need to know...

Legend has it that it was Napoleon’s favourite cheese, which he enjoyed regularly with a good Chambertin. Epoisses is just as full of character, and was much valued in the nineteenth century.  This rustic product is washed in Burgundy brandy:  thus its rind is smooth, with a marked, penetrating smell.  Its taste is frank, complex and recherché:  its taste comes out as the fine and supple interior melts on the palate.  This is a cheese with a great personality!
