What you need to know...
The Feuille du Limousin is a relatively recent cheese since it came into existence about 30 years ago, due of course to the clear-sightedness of keen Limousin farmers. Its shape suggests the symbol of the region, which embodies the chestnut tree. It is a milky cheese covered by a very discreet, non-invasive white rind to respect the delicate character of the interior. This is slightly fatty, containing a rapidly melting aspect. From the taste point of view, there is a persistent accent when in the mouth, which develops into expressions of the finesse of the local soil and of the season. Why not accompany it with a Brouilly served at cellar-temperature?
