What you need to know...
At the risk of being mistaken it could be taken for a Coulommiers cheese, but it’s a little bit bigger in size. Its overall cover is always spotted with more or less dark, sometimes red, spots indicating a sustained refining process. The fern which decorates its surface indicates organic accents but only in the case of long, laborious refining. Its frank milky taste, for a refining process which is just right, is enriched with more complex accents, including earth, mushrooms, etc.
