This is another survivor of the development of present-day tastes and formats which a great lover of the cheese has rehabilitated.  It is still milder and still smaller … As for this great 3kg munster, it needs time to be refined to its heart.  We love it in two phases:  after a month in the cellar, which leaves it very balanced between freshness and strength;  after three months cellar life, buttery to its heart and powerful and complex.
