This cheese from “des Pays de Loire” is created since the beginning with a mixture between goat and cow’s milk. It goes, during the first part of its existence, as a cheese with cleaned crust being refined, to allow it to develop a consistent taste. Then, during its adolescence, it will join our cellars to be perfectly engaged to herbs and spices which, traditionally, accompanied this type of cheeses in the secrecy of our grandfathers trunks. Thus it acquires with its original power, the feel and consistency of the country side, rich in taste, with a prolonged sense in the mouth.
