What you need to know...
This is a veined ewe milk cheese from the Basque Country, and gives the opportunity of discovering the Black Faced Manech sheeps’ milk. If the interior at the start is firmer than Roquefort, Itxassou’s melting capacity remains significant, with a flattering finale in the mouth and a non-salty aftertaste. The recommended wine to accompany it is a naturally sweet Jurançon, preferably from late-picked grapes.
