What you need to know...
There is of course Cheddar and Cheddar, but this one claims to rise above them all, being manufactured as it is from raw milk. With, as required, its initially cloth-based rind it has a somewhat greasy interior for this type of cheese, with a texture which melts in the mouth. Its balanced acidity makes for an aromatic hazel nut type expression, sometimes with citrus fruit echoes.
