What you need to know...

Supple, creamy, fresh and yet lingering in the mouth.  There are numerous adjectives to describe this ewe-milk cheese brick.  Its natural rind, slightly covered with a fine duvet of penicillium candidum, preserves an all-ovine taste to the cheese inside.  It is very good for starting a cheese-tasting session.
