What you need to know...

Langres is a traditionally-made cheese with a label guaranteeing its origin and, as its name indicates, comes from the high plains of the Champagne region.  With its cylindrical form, its summit is a bowl, called the “fountain”, into which Champagne or Champagne Brandy can be poured, which is the traditional way of enjoying this cheese.  It has a shiny, slightly damp surface due to being regularly rubbed with brine.  The cheese is supple and tender revealing a combination of complex aromas. Despite its fairly strong smell and taste, Langres is nonetheless milder and finer than Epoisses-type cheeses. It is a refined alternative among the great family of washed-rind cheeses.
