What you need to know...

Laurentine is a mild goats’ milk cheese impregnated with the bay leaves which accompanies it, and envelops its taste with woody aromas.  It has a creamy texture with a smooth and fine interior.  It should be sampled when it’s fairly fresh:  its flavours brought out by a dry white creating a subtle sensation, a mixture of lactic freshness and seasoning.
