What you need to know...

This cheese in the shape of a rugby ball, was created by Xavier for the occasion of the World Cup 2007, and is of course produced in the Toulouse countryside.  It is delicate to the touch, its colour slightly blue and ashen.  If it’s a tad slow in the mouth this is because of its partly dry aspect.  Its delicate goat’s milk taste comes to the fore towards the end, associating with it a bouquet of autumnal flavours.
