Created in the village whose name it bears, Livarot is also known by the name “Colonel”, because of the 5 blades of rush which surround it, and is a reminder of the 5 stripes of the military rank. It is a characterful farm cheese with a pronounced taste and smell. It has a damp rind, and a melting interior emanating slightly spicy aromas.
