What you need to know...
In Lochois country, between Berry and Poitou, south of Touraine, a few flocks of ewes are fed so as to produce this white Lochois. While grey Lochois is fairly well-known, this cheese thanks to the refining process, has a brighter flavour. It is more aqueous and has a stronger character that marries very well with the chilled white wines of the Touraine region.
