What you need to know...
Lochois is a raw milk cheese made from the Western Red breed of sheep. A seasonal cheese, it is only made during the months of March through August, when the sheep are eating fresh grass from the pasture. It is a lactic curd, that on can equally meet under the white, non-ashed form. This one is dusted with beech tree ashes, which confers onto it a more accented wooden taste Its taste is very straightforward, buttery in its texture but not excessively so.
