What you need to know...
Manchego is the Spanish cheese of reference. It exists in a variety of forms, especially as a function of the refining process: it can be fresh, dry or old according to its maturation, which goes from 5 to 60 days. The rind is grooved and solid, while its interior, issuing from succulent ewe aromas, melts easily because it is relatively fatty, pale and aerated by small holes. When young it is much appreciated with quince jelly.
