What you need to know...
This is exclusive to Xavier, and is manufactured according to an ancestral recipe, confided in the greatest secrecy to Xavier himself by an old peasant. Today its manufacture is assured by a lady producer from Provence and her small flock of goats, especially for our cheese boutique, using all the arts of tradition. It is a farm cheese, and each piece is carefully prepared and worked. In it we find scrubland perfumes and a small dash of spices. As for its ashen part, it confers a slight and specific cooked meat aroma on the cheese.
