Mascaré is a cheese-producers’ original: it is enveloped in a chestnut-tree leaf, from which it will develop slightly woody and live aromas. Yet its interior is very delicate, supple and buttery, and its smell under-pronounced. There results a subtle marriage of flavours, reinforced by the mixture of goats’ and ewes’ milk: there is the lightness and liveliness of the first, associated with the rigour and velvetiness of the second. This is a delicious composition awaiting your discovery!
