A colleague of Brin d’Amour, but in a smaller size, it displays similar characteristics. It is enveloped in some of the renowned perfumed spices of the Ile de Beauté (Corsica), marvellously conserving the personality of its native soil: as much capable of a delightful milky mildness at the onset of refining, as of a more and more “full flavoured” temperament with age… This is a most interesting tasting date, on a cheesemaker’s honour!
