What you need to know...
Mr Moine from Poiset is a great cheesemaker. From the milk of his goats he had the idea of producing a cheese belonging to the the great product of his Burgundy region, i.e. Epoisses Cheese. Thus using the same technology, but of course from different milk and in smaller volumes, Moine de Poiset has a dark-brown rind on a small disk in the Pélardon format. The cheese is buttery and creamy with a discreet smell despite its refining process using Burgundy brandy. In the mouth it produces a series of expressions each more varied than the other, where goats’ milk flavour becomes mixed with a little pungency from the refining phase, going on to the animal nuances of the washed rind, and ending with herbaceous food fragrances.
