Morbier is a compromise cheese, being neither too mild nor too strong Its interior is supple and delicate under a rind naturally brushed by the refining process. In other times, the blue stripe at its centre used to be made of soot so as to protect the curds. Today the function of this line is purely decorative … and to perpetuate the memory of this cheese of yesteryear.
