What you need to know...
Mothais is a farm goats’milk cheese with a melting interior and a delicate taste. It benefits from a specific refining process, by ripening in 4 to 5 weeks in a particularly humid atmosphere. The chestnut-tree leaf which enrobes it thus ensures that it guards all its humidity, by slightly perfuming it with woody aromas.
