Moulis is traditionally-made in only small quantities according to know -how transmitted from generation to generation. As a worthy member of the family of Tomme de Pyrénees cows’ milk cheeses, it is similar to its neighbour, Bethmale, but less sweet and containing more typical characteristics. Whether young or old it always emits a pronounced rustic taste, which becomes full- flavoured with age. The cheese has a touch of mildness, and scattered with holes under a rind which darkens with refining.
