What you need to know...

This is a farm cheese from the Espinouse mountains, in the Haut Languedoc Regional Natural Park.  It is produced from farm-grown ferments by the lady shepherdess, and its fine natural rind develops during the refining process when its interior is tender and delicate.  Its taste imparts mild milky flavours with goats’ milk aromas dominant which become established during refining.
