What you need to know...
Olivella is a farm cheese, manufactured according to the grand Corsican tradition. It has a slightly wet interior: which is “washed” at the very beginning of its refining so as to prevent fungi from developing on its rind. This technique gives it a certain power, balanced by the creaminess and velvetiness of the ewes’ milk. This results in a marked aftertaste, and a certain lingering in the mouth.
