What you need to know...

Here is a pure ewe’s-milk cheese from Béarn, a southern region just to the east of the Basque country.  In the western Pyrénées, the production of cheese from ewe’s milk is ancestral and it is here that Ossau was born, with its firm, dense base.  An exceptional cheese, it is eaten cut by hand, by thin slices of a knife, like carpaccio, or simply presented as an assortment at the end of a meal.
