This cheese, the kid brother of Epoisses, is a real allusion to good-natured intimacy. During its maturing phase it is regularly washed in Marc de Bourgogne (a Burgundy brandy), and thus conserves a delicate and fragrant taste. Trou du Cru is a cheese of character with its fine crust that just melts in the mouth emitting a number of flavours: salty, sugary, milky ... The cheese, supple to melting according to its maturity, knows how to create sensations!
